Now that we're all in a state of relief from the election being over (and for the positive outcome of it!), we've been doing a lot more cooking and celebrating, especially since the weather has turned cold and there have been snow flurries in the air.
This past Sunday night, we entertained friends for a soup dinner that consisted of a roasted potato, arugula and leek soup, a hearty mushroom soup, and big green salad and my special goat cheese quiche (shown above). The thing I like most about this dish is that it takes less than 5 minutes to prepare, is very quiche-like but does not require a crust and tastes delicious. I've been making this recipe for over 15 years and it has never disappointed. A wonderful main course if served at lunch or satisfying side dish if served at dinner. Enjoy!
Goat Cheese, Thyme and Red Onion (un)Quiche
8 oz. excellent quality goat cheese
1 1/3 cup heavy cream
4 eggs
1 medium red onion, chopped
1 tsp dried thyme
salt & pepper to taste
Mix all ingredients, except goat cheese and red onion in a large bowl
Whisk together and then let sit while you prepare the goat cheese and onion
Crumble the goat cheese and spread evenly in the bottom of a 9" pie plate (or quiche dish)
Sprinkle chopped red onion over goat cheese until it is all used
Pour cream mixture over goat cheese and red onions
Bake at 350 degrees for 45 minutes or until mixture puffs up and becomes golden brown
Remove from oven and drizzle with extra virgin olive oil
Serve hot or cold
